volume, definition and minerality, with a fine acidity that balances the whole. The finish is very long and of great character. Certified organic and biodynamic farming; gentle pressing of red grapes with immediate separation of skins to preserve freshness and clarity. Fermentation at controlled low temperatures to emphasize aromatic complexity and texture.
