All the vineyards of Quinta das Brôlhas are divided into different plots and each plot is harvested by hand. The grapes are carefully selected by hand before crushing. They are then put into traditional granite stone “lagares”, destalked and then foot trodden for 1 to 3 days before the start of the fermentation. All the fermentation occurs in the same “lagares” with foot treading being made at night and the cap manually broken during the day, with the use of the also traditional “macacos”. After the fermentation the resulting wine is stored into small stainless steel tanks until the end of the malolactic fermentation. It was then racked into small stainless steel tanks and 225 one year old French oak barriques, where it aged for another 20 months. This wine is 100% Touriga Nacional, a noble grape variety which is today claimed by the Dão and the Douro regions as its original birthplace. It is a grape variety that shows thick skin, intense and profound colours, abundant primary aromas of wild berries and violets, at the same time is floral and fruity. The resulting wines are intense and with an explosion of aromas and flavours, with a great capacity for a long ageing in bottle.
